Can I copy a previously used project so I can use all of its categories, etc.?

Yes! Just drag and drop it from the Tree View.

I created a TEMPLATE client and put all my project "shells" under it. When I need to repeat something, I just drag it from the TEMPLATE client to the client I want it and there it is.

Hi,
Sure, you can. The tree supports drag-n-drop.

Just drag and drop a project from one customer to another or the same one, choose what to copy in a dialog box, and hit OK.
Time entries are not copied in the process.
